Define the operating model first
Document covers, dayparts, menu complexity, staffing assumptions, and peak production volumes. A consultant designs for a process. If that process is still fluid, the layout will be too.
Lock decision rights early
Identify who signs off on flow, equipment classes, hygiene zoning, and MEP loads. Ambiguous approvals create parallel versions of the same drawing set and slow every downstream trade.
